Triple distilled and made from 100% malted barley using the pot-still distillation method, Lambay Single Malt distillate is rich and complex and needs more time for all taste molecules to combine and become well balanced.
Usually, grain distillates are smooth and subtle and need less time to combine, however single malt is more complex which makes the spirit rich enough to bear Lambay's 100% cognac cask finish.
Lambay Single Malt ageing is founded by two main influences – the fruit components from the wood (cognac cask) and the interaction of the unique maritime atmosphere surrounding our barrels.
The casks are brought from the cellars of Camus Cognac to Lambay Island where the spirit is expunged into these casks from the distillery. They are then laid down to rest in the bonded warehouse called the Sea Cask Room. This warehouse is lying right on the North East shore, open to all the influences of the sea. The casks lay in the traditional cognac style (on their sides) and receive the full atmospheric influence of the Irish Sea and unique micro-climate on Lambay.
The North East of Ireland is known for being one of the most concentrated areas for sea-spray aerosols in Europe. These particles deliver an atmosphere that is high in negative oxygen (ions). These ions are high in lipids from the rich phytoplankton in the Irish Sea. The oxygen is highly concentrated, with iodine and other components that aid the wood interaction and influence the specific taste. It is no wonder that our flora and wildlife thrive here!
Lambay Whiskey Single Malt is complex and rich, it needs more time for the taste notes to marry. With time, all molecules react together and produce our unique spirit. Lambay's Master Blender controls this complex stage of evolution by consistent testing and uses several fills of cognac casks for this process. These fillings allow a different kind of extraction from each cognac cask and present a good balance between the Irish whiskey taste and the rich cognac flavours. All the cognac casks have been hand-selected for their rich and complex notes, especially prepared for the whiskey fills to adapt to the blend. Lambay's passion is to play with this complexity to reach the optimum balance. This is their crafted approach to finishing.
